I'm always looking for more ways to get more greens and vegetables into my diet. Let's be honest, most of us don't.
Green leafy vegetables are a great source of lots of vitamins and minerals your body needs to stay healthy, including: vitamin A, riboflavin, folate, vitamin E, vitamin K, magnesium, manganese, potassium, etc. These vitamins and minerals work to sustain essential processes in the body. They help aid in metabolism to provide energy, protect your cells from damage, boost immune function, aid in digestion, maintain good blood health-- the list goes on!
Unfortunately our bodies can't produce all of these little helpers on their own, so we need to get them through food. The problem is most Americans do not consume the recommended intake of these essential nutrients.
But it is not too late to start!
An easy mean of getting these-- salad! I know, salad can be boring. But it doesn't have to be. Salads are so versatile. You can make them as simple or as crazy as you want!
Try out this SuperGreen Salad recipe. You can add any protein to it that suits your fancy-- salmon, tuna, chicken, lean beef, quinoa, whatever! You can also add any fruit or vegetable that you please! Have it as a side or as your main entree. The almonds, raw veggies, and broccoli slaw make it extra crunchy-- in my opinion, more fulfilling than wilty lettuce. The tiny bit of citrus in the dressing and sweetness of the balsamic take away from any bitterness in the greens, complimenting it well!
